Everyone loves our easy chicken sausage rolls recipe. They’re great for packed lunches, buffets or just as a simple weekend lunch idea.
Chicken sausage rolls are a twist on the classic pork sausage filling. They’re super easy to make, taste great and we’ve added lots of ways to mix things up and add more flavours!
These are a great finger food for buffets, lovely as an easy weekend lunch or as part of a Ploughman’s platter.
The secret to a fantastic tasting chicken sausage roll is to use great chicken sausages. We use the Heck chicken sausages in our rolls, they’re flavourful and easy to cook with.
Equipment Needed To Make Chicken Sausage Rolls
- Plate
- Sharp knife
- Mixing bowl
- Cup
- Fork
- Pastry brush
- Baking tray
- Cooling rack
Ingredients For Chicken Sausage Rolls
You only need a handful of ingredients to make our tasty chicken puff pastry rolls.
- 340g chicken sausages – we used a pack of 10 from Heck
- 1 Jus-Rol puff pastry sheet
- 1 egg – beaten
- 150g Red Leicester cheese – grated
- 1 tsp dried oregano
Cooks Note! Remember to take the puff pastry sheet out of the fridge around 20 minutes before you want to cook with it.

How To Make Chicken Sausage Rolls
It’s really easy to make our favourite Heck chicken sausage recipe!
Step One – preheat the oven
- Preheat the oven to 200C / 400F /Gas Mark 6
Step Two – skin the sausages
- Use a sharp knife to score the skin on each sausage. Then flip the sausage meat out of the skin and into a mixing bowl.
- Mash the chicken sausage meat together in the bowl with a fork.
Step Three – make the chicken sausage rolls
- Unroll the puff pastry sheet.
- Put the chicken sausage meat into a fat line down the centre of the puff pastry sheet.
- Brush the edges of the sausage roll with the beaten egg.
- Then fold the puff pastry around the chicken sausage meat to make one long sausage roll.
- Cut the sausage roll into eight equal pieces and arrange them well-spaced on a lightly greased or non-stick baking tray.
- Sprinkle the tops of the sausage rolls with grated cheese and a pinch of the dried oregano.
Step Four – cook the chicken sausage rolls
- Put the sausage rolls into the hot oven and bake for around 35-40 minutes or until the chicken sausage is heated through and cooked properly, the pastry is puffed and the cheese turning golden.
- Once the Heck chicken sausage rolls are cooked through, remove them from the oven and place onto a rack to cool, this will stop the bottoms getting soggy as they cool.

Chicken Sausage Roll Recipe Tips!
Feel free to add ingredients to your puff pastry chicken rolls and really make this recipe your own!
Add more cheese!
These little chicken pastries are great with some feta cheese and fresh mint mixed into the sausage meat for a Mediterranean twist. You could also try adding shredded mozzarella in with the chicken meat too.
Make them festive!
Add some stuffing and cranberry sauce to the sausage roll and make these a little Christmas party food! Great for the Christmas buffet table, or just serve with drinks.
Add some toppings!
You can skip the grated cheese on top and go with your own topping ideas. Try a mix of seeds, nuts, any other cheese you like or dried herbs. We like these made with poppy seeds and dried sage.
